It is getting warmer and I am craving fresh salads. As a vegetarian, I get tired of the same type of salad with my meals, but I have 3 favorite salad options that are healthy, full of vitamins, and are also great for guests. Thankfully, with theses 3 salads you won’t feel like you’ve been chopping for days nor will they break the bank. The three salads below are fresh, healthy, frugal, and satisfying.
Scrumptious Radish & Almond Feta Cheese Salad
Directions: wash and dry all produce in a salad spinner if you have one available. Chop your ingredients (radishes, tomatoes, parsley) as instructed in the image above. Combine the chopped ingredients with the baby spinach. Plate the salad or add it to a serving bowl, and top with feta cheese, almonds, and walnuts and your choice of LiteHouse Homestyle Ranch or Chunky Bleu Cheese Dressing.
Garden Fresh Baby Spinach Salad
Directions: wash and dry all produce. A salad spinner will come in handy if you have one. Cut your ingredients (carrots, tomatoes, parsley, garlic, and red onions) as recommended in the image above. Combine the ingredients you chopped with the mixed greens. Plate the salad or add it to a serving bowl, and top with croutons and your choice of Litehouse Homestyle Ranch or Chunky Bleu Cheese Dressing.
Watermelon Kiwi Summer Salad
Directions: wash and dry all of your whole fruits. Slice your ingredients (watermelon, kiwi, oranges, strawberries) as instructed in the image above. If you have a star cookie cutter you can create star slices for a festive arrangement. Arrange the ingredients in your favorite serving dish and enjoy!
